Recipe – Chicken & Squash Bake

yum created a new dish tonight that was DELICIOUS

ingredients:

1 lb chicken breast (cut into chunks)
1 small (4-6 oz) yellow squash
1 small (4-6 oz) zucchini
1/2 small butternut squash (i don’t know how much this weighed, i cut it up (and cooked it) before thinking to weigh the vegetables, but i know it was small, much smaller than any other butternut i’ve seen or used… probably about 6 inches long)
.75 fl oz apple juice ((i used one box of juicy juice apple juice))
1/2 TBSP of minced garlic
1/4 cup lemon juice
1/4 cup apple cider vinegar
2 tsp cumin
1/2 TBSP tandoori masala {{http://www.whitejasmine.com/marketplace/spiceblends.html}}   ((((I **Definitely** recommend buying this at some point in your life because it is AMAZING and adds such a depth of flavor to anything you put it on!!!))))

ok –

preheat oven to 400*

spray a 9″x13″ baking pan (i used glass) with nonstick spray

cut up your veggies; place them into pan,

pour apple juice into pan

cut up chicken – place in a separate bowl

pour the rest of the ingredients over the chicken and let marinate (you can do this ahead of time to get more flavor if you prefer – i did it for about 5 minutes)

pour chicken mixture into pan and give a stir to blend the vegetables and apple juice with the chicken mixture

cover with foil

put in oven for 45 minutes to an hour

i baked for an hour and the veggies were a bit mushy, but still delicious.

makes 4 servings (i think)
