Mock Eggplant Parmesan
there are absolutely no measurements in this recipe, and i wish i had taken pictures, but i ate it too quickly and didn’t think of that!! if anyone makes this, please feel free to send me some pics!!
1 eggplant (i used small cuz there’s just me)
Weight Watchers shredded mozzarella (b/c i’m on a diet; feel free to use any shredded cheese you want; namely parmesan)
preheat oven to 400*
spray a baking sheet with non stick spray (( OR if you have an olive oil mister — totally use that!!))
slice eggplant into small slices, i’d say probably quarter inch or a little bit bigger, but not bigger than a half inch.
place slices onto baking sheet in single layer, bake for 10 minutes
while waiting – slice your grape tomatoes in half
pull out tray and flip slices over. top with cheese (i used a regular size spoon and topped each one individually as to not have to deal with cheese all over the baking sheet)
top with tomatoes (i used 2 per slice except for the smaller slices)
bake for another 10 minutes.

take your tomatoes and toss them in some olive oil, and italian seasonings and garlic
put baby spinach on top of the egg plant, tomatoes, and then sprinkle with cheese
OMG SO GOOD…
also, these don’t reheat very well. at. all. (yuck)
