on friendships in the military

have I written this before?

I feel like I might have,

but seeing as i’m still in the military, I still have feelings on it. . .

today one of my friends pulled out for deployment… and a home port shift

what does this mean?

this means, that more than likely I will never see her again.

it’s all fine and good and what not when you don’t ever see people you went to boot camp with or school with, but, if you’ve known someone for a few years, that is when it sucks…

and when you’re stationed at a command with someone and become good friends with them, and transfers happen, or people get out… you, more than likely will never see that person again.

you keep in touch via facebook, sometimes text… ((because who calls anyone these days??!))

and then one day you notice they’re no longer in your news feed…

THAAATTT sucks 😦


Help a friend out — Equine Therapy

there’s a girl I know who I met when I was stationed in Great Lakes… she’s a pretty cool girl (she helped me move when I got to Virginia!!!)  and I would love to be a fly on the wall for a majority of the things she goes through, she’s very witty, and I’d say friendly — but the stories she tells prove otherwise — to the people she doesn’t know – or that try to mess with her.

anyways, Amanda is getting out of the Navy soon (lucky) and is about to start an Equine Therapy Ranch… however, she needs funding – read about it and then go help her out!!!

Everyone has a dream. Unfortunately, when you grow up, you realize dreams cost more than just good intentions and desire. Currently, I’m serving in the military, due to get out next July or possibly earlier thanks to an injury – there goes that dream.

Now I’ve found a new dream. It’ll be a minute before I get it up and running, but I’m starting off at the bottom. Ultimately, the plan is to get a equine therapy program up and running, specializing in rehab therapy for Wounded Warrior Programs, other veterans, people with PTSD and other mental health concerns. It will also include programs for the Special Olympics, and therapy for children, including ADHD, depression, autism, etc. I’m even hoping to be able for it to be a foster home, and an work with rescue awareness with the animals I intend to have for the programs. I know that in order to succeed at this, I’ll need the right property (The second picture is the one I have my eye on in Vermont), tools and people to help out. That’s the ultimate purpose – the non-profit side of it. In order to continually support this idea, I plan on grants and business partners (I’m sure most people aren’t surprised to find lower tier enlisted military make barely minimum wage), and having what people have started calling “adult summer camp”. The business end of it that would support the charity work are things like: trail rides, riding lessons, horse boarding, vacation cabins, skiing…it will also be some place I hope groups like Venture Crew, Boy Scouts and Girl Scouts will be able to come for space and wilderness experience. There will be home grown vegetables and fruits from the gardens and the orchards, signature foods and drinks (I’m hoping for a vineyard), etc. I have staff, trainers and even maintenance people all lined up. This is the ultimate goal – but not where I’m at now. I’m starting off low down on wish list, which is why I have this posting.

I currently need, and will need in the future, a horse trailer. One, for people who plan on boarding at the facility. Two, to take people to various trail heads at the National Parks in the area (like the Green Mountains and White Mountains). The third reason is so I can use my time now to getting money together for the property, employees, and horses by renting it out to people in the area who can’t afford one on their own. I live near highly horse populated areas – Gloucester County and Virginia Beach, and I know from experience there’s only two people who rent trailers nearby (and by nearby, I mean within 50 miles), and they charge $100 a day, plus gas. I’m hoping to start off with less than that and build a customer base that will start me towards the farm.

Amanda has some great plans already and though this is in the early stages, I’m sure those plans will become a reality with time and some financial help. Chili ala T

I don’t have a picture of this… I haven’t made it in awhile.. however, I was searching and searching for it b/c I am going to make it in an hour or so for tonight 🙂
and i’m posting it b/c I almost couldn’t find the version that I wrote down…
now I can find it whenever I need it 🙂

I absolutely love this version of chili…

I created it the first time I ever made chili and someone asked for my recipe so I just guesstimated on the amounts and it works…

mmmm so good…

T’s Chili —

1/2 c bbq sauce

1/2 c brown sugar

1 green pepper, diced

1 onion, diced

2 roma tomatoes, diced

1 tbsp minced garlic

1 small can tomato paste

1/2 tsp garlic powder

1 lb ground meat (I use chicken or turkey) browned and drained

1 tsp tandoori masala ( — I don’t know where else you might get this… and you can totally leave this spice out… but I LOVE THIS blend!! on TONS of stuff!!)

2 tsp chili powder

1/2 tsp cayenne pepper

2 tbsp. cocoa powder ((yeah.. chocolate. in chili. love it)

1 tsp salt

1 tsp pepper

2 cans chili beans ( I cheat and use Bush’s beans… one can medium, one can hot)

throw your ingredients into a crockpot on low for 8 hours and voila


it’s sweet and smoky and spicy and mmm… so good!! 🙂

I miss WordPress(ing)

in about a week I will be on nights again…

maybe… at that point I can start blogging again… but I sincerely doubt it… our work computers have started acting all wonky when it comes to wordpress, and as that is where I will be spending the majority of my time when i’m on the computer, it remains to be seen about whether or not I can get back into the blogosphere…

*sigh* I also miss being able to read the freshly pressed posts… that’s one of the things that I miss being able to do also…


so, when i was in my hometown… – note that — my hometown, not home…
let me explain something here before i go into this blog detail.
i grew up… well.
i was in the kc area (an hour south) until the summer of my 7th grade year…
then we moved to the STL area … i lived there until 2009. Jan 1 to be exact.
and then i moved to florida.
i have NEVER felt more at home than i did in florida.
it’s amazing.
and then, i met my husband… so… i feel like it’s where we belong.
it’s my home. it’s OUR home.
i do have a ton of friends in stl … of course. i was there for over half of my life.
(ok right at half of my life) … well. . . until i moved to florida. i don’t know.
how old is a person in 7th grade… ?? whatever. til i was 29…(*right* before i turned 30)
ok. anyways, i digress.

so. anyways.
although the reason for my visit back to stl was a sad reason, i did get to see several friends…
including 2 of my best friends.

i was kinda sad not to get to see J… but she had already made plans… and — it was kind of last minute… so…*shrug*
i ALSO got to see a couple of my high school besties!!
it was great to be able to catch up with everyone.
with L, we discussed her upcoming nuptials… for which i’m super excited for her!!
with E, i met her youngest … who is going to be 2… and let me tell you what happened…
i pulled up to her mom’s house – kind of by surprise… and her 2 kids were at the top of the driveway, and i walked into the driveway, and
her little boy (youngest, who i’d never met) just walks right up to me arms open.
now, he is just adorable. i don’t like kids — but… her kids are seriously the cutest blondest little things in the world
and i’d met her oldest (who will be 4 soon? or just turned 4? ) before… and of course she doesn’t remember me…
but, her little boy decided i was the greatest fun in the world and just kept running up to me and all that stuff.
apparently — he doesn’t do that…
she was shocked…
but, i got to catch up with her… not that i need much catching up — cuz we talk all the time… but she did offer me support on the subject of dealing with my family… and it was just so great to see her in person, instead of texting or emailing…
and then we went to the bowling alley to meet up with the high school girls… we tried to get more people involved, but lack of numbers, and last minute planning… well… *shrug* 2 of them were there, which is just fine… one of them – Ji – was the first person to befriend me when i started 8th grade in the area… and the other – Je – just became a good friend through the years… so i hung out with those two & E and Je’s baby…
yea — i know… babies…me??? who’d’a’thunk it… {is that how you spell that??}
but… i got to hand them back, so all is good 🙂
and i also got to spend some time with my cousin T.
i know i mentioned that in my previous post, but… i’m very happy for her and her new happiness with her new man… 🙂
and then i got to do lunch with E before i left… and omg — if you’re in the o’fallon mo area — try rendezvous wine bar.. because it was DELICIOUS!!!!

so… i totally miss my friends… all the time.. .but i’m so happy i was able to see some of them.

Spaghetti Squash, kale, chicken, onion, red pepper

Spaghetti Squash, kale, chicken, onion, red pepper

Mom asked what this was called… “Spaghetti Squash and stuff” was my response…
she said “spaghetti squash and stuff?” and I said , “yes”, she said, “well it’s really good…” and A said “it’s f’n delicious!!!” husband said “it’s just so good that I haven’t wanted to stop eating to tell you that”

here goes:

1 medium/large spaghetti squash
1 medium onion
1 small red pepper
2 tbsp. minced garlic
2 tbsp. butter
2 tbsp. flour
1 1/4 c almond milk
5 oz gruyere cheese (shredded)
12 oz chicken – cut into small pieces
1 c frozen spinach/kale (thawed)
1 tbsp. olive oil
2 tbsp. balsamic vinegar
salt, pepper to taste

preheat oven to 375*F
cut your spaghetti squash in half and scoop out the seeds.
take a jelly roll pan and line with foil, coat with olive oil, brush both halves of spaghetti squash with olive oil – inside and out
pop into the oven for 35 minutes
there are SEVERAL ways to get the squash to it’s ready point, I just choose this one… it works for me, and it doesn’t leave my veggie mushy inside… nothing worse than mushy spaghetti squash. . . totally ruins the dish.
I needed to pull out my Cuisinart food processor to shred my cheese, cuz i’m much to lazy to stand there and hand grate it.
after I did that, I was cutting up my onion and looked over at my lonely Cuisinart and said huh… screw this and I threw in my onion & pepper to the empty bowl and used my regular blade to get it allllll nice and little… I thought it might have been TOOOOOO little, but it turned out to work very well!!
throw your butter in a pan and melt it — and after it is melted throw in your onion, pepper, and garlic.
sauté that up until desired done-ness.
take your kale (or spinach… I happened to have frozen kale – so I went with it) and toss that into your pan
cook a few minutes more, mainly until the kale/spinach is nice and steamed
throw in your flour… stir very well, let cook for another minute or so, lower heat and add your almond milk (or whatever milk you choose to use)
make sure to stir that very well also.
throw in your shredded cheese and stir it up while it’s melting… I will have to admit that the cheese took longer to melt than I thought it should have… (read: longer to melt than any other time…but I suppose that’s cuz I had so much stuff in there)
add in the spices you wish – salt, pepper, this, that, the other… I added some crushed basil leaves (because I didn’t have any fresh)
set aside
((actually, my version of setting aside – was : at this point my spaghetti squash was done, you SHOULD wait for it to cool a little before trying to get all the ‘noodles’ out, but I didn’t… I greased a 9 x 13 baking dish, and scooped the squash into there, and then poured my cheese sauce on top of it while I was waiting for my chicken to cook.
to cook the chicken, I cut it into bite size pieces and threw it in the pan with a tbsp. of olive oil and the 2 tbsp. of balsamic vinegar. cook until done, and then mix everything together.
at this point, because I could never go vegan and give up cheese – I sprinkled some parmesan/romano on the top of the dish.
and then I threw it in the oven for 25 minutes, and then broiled it for 3 minutes (b/c I was too impatient to wait for 5)

it was delicious.
so yum
served about 6 people, and honestly I don’t realllllly want to take the time to do the calorie and nutritional info, b/c why start doing that now? right?

so,,, there are a few blogs, that i have found and really like…
but, i kinda feel like a stalker following them…
now. let me state — this is very hypocritical, b/c i would love to have more followers…
but, i’m kinda shy…
i was going to say introverted, but just the other day my lpo (supervisor) said that i was extremely extroverted…
i guess it just depends on the situation…
i don’t want some person i don’t know thinking that i’m stalking them for no apparent reason… but, sometimes, it’s the only way i will be able to find their posts easily again…
— easily — cuz a couple of the blogs i found, i posted about… so i could find that post and click-through from there. . .
but.. geez.. .that gets annoying.. haha
so right – any advice on not feeling creepy??
maybe from the folks following me that i don’t know?
by no means, am i trying to insult you guys by the way, thank you for following me, i appreciate it and hope i can provide you some amusement or some yummy recipes to try…
